I don’t know about you, but I love snacking. I am always looking for something to eat, no matter how hungry I am. Sometimes that gets me in trouble, especially when I have goals and eating habits I am trying to stick to. Then Pinterest started overflowing with one-serving cookie dough and mug cakes, and I was in trouble.

I love cookie dough. As a kid, my best friend, my sister and I used to walk up to the corner store (it was the furthest place we were allowed to walk at the time) and get a tube of cookie dough, then walk a few doors down to the Chinese restaurant and pick up a large chicken fried rice. After the seemingly long 10 minute walk home, we devoured both the rice and raw cookie dough. So, needless to say, the Pinterest one-serving recipe was deadly to my whole-food-portion-controlled meal plan. I needed a healthy substitute. Thus, these no-bake peanut butter protein balls were born.

No-bake Peanut Butter Protein Balls

A healthy alternative to cookie dough bites.

You'll Need...

  • 1 cup oats
  • 1/3 cup honey
  • 1/2 cup peanut butter or almond butter
  • 3/4 cups unsweetened shredded coconut, toasted
  • 1/2 cup dark chocolate chips
  • 2 scoops Shakeology or chocolate protein
  • Optional:
  • 2 T chia seeds
  • 1 T flax seed, ground
  • 1/3 cup slivered almonds
  • 1/4 cup unsweetened cocoa powder


  1. Combine ingredients in a bowl.
  2. Roll into balls (a heaping tablespoon size).
  3. Store in the refrigerator or freezer.*

Additional Notes

*Will be good up to two weeks in the refrigerator.

Gluten-free oats can be substituted.

If adding the additional ingredients, a small amount of water, more honey, or more nut butter may need to be added to reach the right consistency so the mix is not too dry to form into balls.

I make this recipe all the time, and snack on them when I have a craving for something unhealthy. Or sometimes I eat one or two while making dinner because I am too hungry to wait. They’re a good anytime snack – for kids and adults! I store mine in the freezer and eat them frozen – just like I like my cookie dough. For a softer bite, they can be stored in the fridge for up to two weeks.
